How to brew

  • Tea Amount: Use 5-7 grams of Tieguanyin tea leaves per brew. This amount works well for a small teapot or gaiwan and allows the tea's full aroma and flavor to come out.

  • Water Temperature: The ideal water temperature is 203-212°F (95-100°C). Boil the water, then let it cool just a bit before pouring.

  • Brewing Times:

    • First rinse (optional): Pour hot water over the leaves and quickly discard the water after about 10 seconds. This “awakens” the leaves and removes any dust.
    • Second to fourth brews: Brew for 15-20 seconds. Adjust the time slightly to get your preferred tea strength.
    • Fifth brew and beyond: As the flavor begins to mellow, you can gradually increase the brewing time to about 30 seconds to 1 minute.
  • Number of Brews: Tieguanyin can be steeped 6-8 times or more. Just extend the brewing time slightly with each steep to maintain a balanced flavor in each cup.
